Leeches, Lime and Cream Frost

Ingredients
13 oz can leeches in syrup, drained
1 fresh or dried lime leaf, chopped, or grated rind of 1 lime
7/8 cup heavy cream
 
Method:

1.  Line a plastic tray with waxed paper and scatter on the leeches, making sure they are not touching.

 
2.  Freeze for at least a couple of hours until solid.

3.  Place the frozen leeches in a food processor with the lime leaf. Turn on the motor and slowly pour in the heavy cream. As the cream hits the frozen leeches it will semi-freeze into a thickened, frosty mixture.

4.  Divide between chilled glasses or bowl and serve.
