Contributed By: Admin
Serves: 4

Ingredients
4 boneless, skinless chicken breast halves
Marinade:
1/2 cup fresh orange juice
2 tbsp lemon juice
2 tbsp honey
2 tbsp Worcestershire sauce
2 tbsp Dijon mustard, grainy style is best
1 tbsp grated orange rind
1 tsp dried tarragon
Garnish:
Sprigs of watercress and orange slices

Method:

1.  Place the chicken in a large glass-baking dish. Combine the marinade in a bowl and pour over the chicken and marinate in the refrigerator for 2 hours.

2.  Preheat the oven to 375 degrees and bake the chicken in the marinade for 16 to 18 minutes. Increase the heat to broil and run under the broiler for 4 minutes, or until golden.
