Brush this sauce over chicken before cooking it on the barbecue.
1. To make the sauce, heat the oil and fry the onion and garlic until soft.
2. Stir in the remaining ingredients and simmer, uncovered, for 15—20
minutes, stirring. Cool slightly.
3. Pour into a food processor or blender and process until smooth.
Press through a sieve if you prefer and adjust the seasoning.
4. Brush the sauce over the chicken portions and cook them thoroughly
on a barbecue or under a grill. Turn occasionally and brush with more sauce. Serve hot or cold.
