The DVD edition of
The Lord of the Rings: The Fellowship of the Ring

This is the sauce for roast turkey, but don’t just keep it for festive occasions. The vibrant colour and tart taste are perfect partners to any white roast meat and it makes a great addition to a chicken sandwich.
 
Ingredients
1 orange
225 g/8 oz cranberries
225 g/8 oz/l¼ cups sugar
 
   
 

Method:

1.  Peel the rind thinly from the orange, taking care not to remove any white pith. Squeeze the juice from the orange.

2.  Place the orange—rind strips and juice in a medium saucepan with the cranberries. Add the sugar and 150ml / 1/4 pint / 2/3 cup water to the pan.

3.  Bring to the boil, stirring until the sugar has dissolved, then simmer for 10-15 minutes, or until the cranberries burst.

4 Remove the orange rind and allow.
