Ingredients
1 small bunch mint
15 ml / 1 tbsp sugar
30 ml / 2 tbsp boiling water
45 ml / 3 tbsp white wine vinegar
 
   
 
Method:

1.  Wash and dry the mint. Strip the mint leaves from the stalks and discard the stalks.

2.  Using a sharp knife chop the leaves very finely.

3.  Place in a bowl with the sugar and pour on the boiling water. Stir well and allow to stand for 5—10 minutes.

 

4.  Add the vinegar and leave the sauce to stand for 1—2 hours before serving.
