Victorian Sandwich

Ingredients
Butter or Margarine 4 oz (100 gms)
Caster Sugar 4 oz (100 gms)
Eggs 2 (Large)
Self rising flour 4 oz (100 gms) (sifted)
Milk 2 Tbsp

Filling:
Jam
Whipped cream
 
Method:

1. Preheat the oven to 190C.

2. Beat butter or margarine and the caster sugar until light and fluffy.
   
 
3. Beat in the eggs one by one, adding a little of the sieved flour with eggs. Fold in the remaining flour and milk.

4. Place the mixture into an 18cm / 7inches greased and lined round dish.

5. Place into the low-rack Micro / convect at 190C for twelve minutes, then convect at 190C for five minutes or until golden brown.

6. Cool on a wire tray.

7. When cool, cut into two and sandwich together with jam and whipped cream.

8. Dust top with icing sugar.
